Cooking Made Easy:
A recipe for success
Cooking is an art, but it is also a science. Cooks must pay attention to ingredients, measurements and instructions. There is a multitude of cookbooks for numerous cuisines, but they all have one thing in common: they are difficult to use for people with limited reading skills, limited ability to understand and follow directions, or limited experience in the kitchen.

Eileen Laird of Boone, North Carolina discovered this in her capacity as a direct care provider for individuals with developmental disabilities. One of the skills she taught was cooking, and she was always on the lookout for cookbooks that would enable the people with whom she worked to prepare meals independently.

Frustrated by the lack of resources for people with limited reading skills and/or limited knowledge of the basic steps in preparing meals, she decided to develop her own cookbook, Cooking Made Easy. There are 88 recipes in the book, divided into nine categories: breakfast, soups, salads, breads, appetizers, beverages, main dishes, vegetables and dessert.

Each recipe is broken down into detailed, easy to understand steps, beginning with "Wash hands," and ending with "It is done." Each recipe lists ingredients (to help with shopping), the utensils needed to prepare the recipe, and the dollar amount for the cost of the ingredients.

The process of developing the recipes included testing them out with the individuals with whom she worked. She knew she had achieved success when they began cooking independently with her recipes.
